Coconut Square's:
Base:
1 cup wholewheat flour
1 tsp. baking powder
1/2 cup margarine
1 egg
1 tbsp. milk
- Cut marg. into flour & baking powder. Add egg & milk. Press into 8x8 greased pan. Cover base with jam ( apricot & raspberry are my fav's).
Topping:
1 egg
3/4 cup white sugar
1 tsp. pure vanilla
2 cups coconut
1 1/2 tbsp. melted margarine
- mix together. Spread gently onto jam & base. Bake at 350 degree for approx. 25 minutes ( depending on your oven) Let cool completely before cutting.
