Those that know me well, know that I'm a sugar addict. There once was a time that my addiction ran my ever thought and kept me at an average of 60lbs over weight. Skipping ahead to present day my weight is healthy and I'm in control. However that doesn't mean that my sweet tooth has vanished. Every once and a while I cave and indulge in some candy or make a wonderful dessert on a " non-dessert night" ( Fridays). Last nights popcorn didn't quite fit the bill so this morning I made these:
1 cup wholewheat flour
1 tsp. baking powder
1/2 cup margarine
1 tbsp. milk
- Cut marg. into flour & baking powder. Add egg & milk. Press into 8x8 greased pan. Cover base with jam ( apricot & raspberry are my fav's).
3/4 cup white sugar
1 tsp. pure vanilla
2 cups coconut
1 1/2 tbsp. melted margarine
- mix together. Spread gently onto jam & base. Bake at 350 degree for approx. 25 minutes ( depending on your oven) Let cool completely before cutting.
