Well, now that I have finally seen your blog (I've seen you coming to mine for years, but never could see yours, until now -- lovely to 'meet' you!)... I can divulge that not only are we also gluten free, but we also eat Belle de Boskoop apples, from our tree. This leads me to advise you that a wonderful stuffing for your poultry is based on a whole lot of chopped Belle de Boskoops, with some toasted nuts of your choice (I like pecans or hazelnuts!). For extra excitement, add to this a bit of salt, some rosemary, and browned onions. Yummm.....
